HEALTH BENEFITS OF SWEET POTATOES:
Sweet potatoes are a healthy way to satisfy your carb-cravings as they are high in carbohydrates and sugar. These sugary flesh, taste delicious, and are moderate source of calories as they are packed with fibre and other nutrients that not only help you stay healthy, but also boost weight loss.
Can i consume Sweet potatoes during fast?
Sweet potato is eaten during vrat due to its high fibre content, which not only promotes digestion, but also keeps a person full for a longer time.
That can i replace sweet potato with?
Sweet potato can be replaced with Carrots, Beatroots, Squash, Pumpkin, Bottlegourd
So here i am sharing you a kheer recipe widely consumed during fasting.
TAPIOCA PEARLS & SWEET POTATO KHEER
INGREDIENTS:
HANDFULL DRY FRUITS (ALMONDS, CASHEWS,RAISINS)
3 LONG SWEET POTATOES
1/2 CUP TAPIOCA PEARLS
2 TBLSPN GHEE
500 ml MILK
1/4 cup JAGGERY
1 TSP Saffron Strig
1TSP CARDAMOM POWDER
Step 1
Pre-Prep:
Soak 1/2cup tapioca pearls in water(just a level above) for 6hours or overnight, after washing it thoroughly. Soak till the water disappears, color changes a bit, and it fluffs in size and soft in texture.
In a pressure cooker, place a pressure cooker vessel and top 3 pcs of sweet potaotes on it. Hear 2-3 whistles and switch the gas off. Once the cooker gets cool, remove sweet potatoes and peel off the skin. Grate the flesh with the help of the grater and place it aside.
Step 2
Fry the dryfruits and saute sweetpotatoes:
Heat a pan on medium flame, and add 1TSP ghee to it. Add the dry fruits like (almonds, cashews, raisins) until they change colour, remove on a plate and keep aside.
In the same pan, add remaining ghee, grated sweet potatoes. Saute it for 2-3minutes.
Step 3
Add milk and jaggery:
Once the potatoes start softening, add soaked tapioca pearls, milk and stir well bringing mixture to simmer. Let it cook for 10 minutes. Once done add jaggery, mix well and cook for another 5 minutes.
Step 4
Add dry fruits, cardamom powder, saffron
To this add cardamom powder and saffron strig and cook for 2-3 minutes, before turning off the heat. Finally, add fried almonds and cashews, and serve warm.
Tips I have used light skinned sweet potatoes here.
Light colored jaggery is used for this recipe.
To make it more amazing you can also add some grated coconut or dried rose petals.
More saffran strids can be added if required.
