Peuraideu chikin literally means FRIED CHICKEN in Southern Korea.

Here, the word chikin refers to "a dish made by coating chopped chicken with flour, and frying or baking it".

Basically in this kind of recipe the chicken used is with skin. After frying the skin gets crispier with firm, dry and brittle surface so the sauce gets coated so well.



My Version


At my home, my family prefers the meat used in this dish without the skin. So I have added my twist here. Instead of vinegar, I have added apple cider vinegar. For sweetness, Brown color sugar is preferred.




                           KOREAN CHICKEN

SERVES: 4
Total TIME: 30-45mins. MARINATION TIME: 15mins


Ingredients:

500 grms chicken legs

Salt to taste

1 tblespoon flour

11/2 tblsp gingergarlic paste

1 tsp applecider vinegar

1tablspn Oil 

1 tsp soya sauce

1tsp chillie sauce

1/2 tsp sugar

1tablspn Go-chu-jang sauce 


Instructions:
 
For marination:
In a bowl add chicken ,salt, flour, 1/2 tsp ginger-garlic paste. Mix well and Keep it aside for atleast 15mins.

For sauce mixture:
Add soya sauce,chillie sauce, apple cider vinegar and Go- Chu-jang sauce in a small bowl.

On a flat pan heat some oil on a medium heat. Once the oil is heated add the marinated chicken to it.

Shallow fry the chicken in oil till its cooked on medium heat.

Add leftover ginger-garlic paste to it, mix for 1-2 minutes. 

Add the mixture of all sauces to it and cook until the sauce gets coated well.
 
Serve hot. Sprinkle sesame seeds and slit spring onions for taste and colour
 

NOTES:


CHICKEN: The chicken used in this dish is with skin, but with preference one can use skinless chicken.


Sugar: Brown sugar will give good results.


GO-CHU-JANG sauce: If its difficult to find this sauce. Harissa sauce or Siracha can be added. I have added below some ingredients which goes in this sauce which are easily availble in most countries.

sugar
