Bottle Gourd and Tapioca Pearls pudding
Lauki/Bottle gourd has tremendeous health benefits. As the water contain is high it is one of the vegetables recommended by the dieticians in weight-control programs.
Sabudana/Tapioca pearls isa good source of carbohydrate and can be great alternative to rice or wheat. It is also gluten free so mostly prefered. Its source can be searched in tropical climate.
This combination works well and taste delicios. So lets begin with the recipe.

LAUKI AUR SABUDANA KHEER
SERVES: 4
TYPE: INDIAN DESSERT
Ingredients
1 liter Milk.
250 grams Bottle gourd (lauki) , grated.
1/4 cup Sabudana (Tapioca Pearls) , soaked for min 30mins.
1/2 cup Sugar.
1tablespoon Elaichi/cardamom powder
1 tablespoon chopped Pistachios
1 tablespoon chopped Almonds
some saffran strands
3-4 tablespoon Ghee.
Instructions
To begin making Doodhi Sabudana Kheer Recipe,wash and soak sabudana(Tapioca pearls) it in water for at least an hour. Meanwhile grate lauki/dudhi.
In a large saucepan, bring milk to boil. Let it be on slow heat.
Meanwhile, On a slow heat in a kadai add grated doodhi and ghee,saute till the doodhi evaporated all the water and is Half cooked and translucent.
Add sabudana and saute all together on slow heat till it becomes little soft and changes to transferent colour.
Keep stirring and check the milk,boil it on medium flame till the milk thickens very well.
Boil till the milk thickens or reduces little, now add sugar and stir.
Let the sugar dissolve in the milk completely. See that the sugar dosen rests in bottom of the pan, Add Saffron strands to the milk. It will change it colour to pale yellow.
Now add the boiled milk to the sabudana and lauki. Let it boil on simmar till all comes together for 8-10 mins
Now add cardamom powder,and ground pistachios and continue cooking for 10 more minutes almost, on low heat. let it all come together and till its done.
Serve it hot or chilled.
You can serve Doodhi Sabudana Kheer Recipe as a dessert in a thali.

TIPS:
A small piece of bottle gourd should be tasted before extracting the whole fruit juice to ensure that it is not bitter. If found bitter, then the whole fruit should be discarded.
Soak sabudana pearls for atleasts 30 mins prior for better results.
